Quick and Easy Chicken Tenders
1 cup seasoned bread crumbs (*Recommended: Italian seasoned)
1/2 cup freshly grated Parmesan
1-1/2 tsp dried thyme
1 teaspoon dried oregano
1/2 teaspoon salt
1-1/2 teaspoon garlic powder
A drop of crushed red pepper
8 boneless chicken breast halves, cut into 1/2-inch strips
1/2 cup melted butter
Preheat oven to 400 degrees. In a bowl, combine the bread crumbs, Parmesan, thyme, oregano, salt, garlic powder, and red pepper. Dip the chicken strips in the melted butter, then dip them in the bread crumb mixture, making sure to coat each side with the bread crumb mixture. Place the chicken strips in a single layer in a baking dish. Bake for 20 minutes, or until chicken is cooked through and browned. Serve!
*Johnna's tip: Serve with your favorite store-brought barbecue sauce or honey mustard sauce OR make them homemade (*even better!*) and enjoy. JKGF made this last night with some creamed spinach on the side, dee-lish!
