Warm Spinach and Shrimp Salad
For the Spinach
1 package fresh, fresh spinach (*fresh is the key;-)
2 tbsp. olive oil
1 tbsp. salt
1 tbsp. minced garlic
1 tsp. pepper
1 tbsp. Worcestershire sauce
For Shrimp
1 1/2 tbsp. olive oil
1 cup fresh shrimp
1 tsp. salt
1 tsp. pepper
In a pot over medium heat, add in the olive oil and spinach; sprinkle in salt, garlic and pepper; cover and cook for about 5-7 minutes. Check to make sure the spinach is wilting down and be sure to scrape from the bottom of the pot to move the ingredients to the top. Once all the spinach is mostly wilted down, add in the Worcestershire sauce; combine with spinach. Turn heat down to low and let spinach stay warm.
For the shrimp, over medium heat, add in the olive oil. Season the shrimp (*the shrimp should be clean and de-veined:-) with the salt and pepper and add to the skillet. Cook shrimp until color turns pink and remove from heat.
Top spinach with shrimp and enjoy!
*Johnna's tip: Healthy and good (*well lighten up on the salt and we'll be that much closer to the ultimate healthier lifestyle;-). This is fast and easy for the person who doesn't like to spend to much time in the kitchen but likes to eat and loves veggies (*sounds like us kinda, sorta...;-) Spinach is a easy and delicious way to squeeze in veggies to your dinner diet. The shrimp can be substituted for whatever you like...it's JKGF's fun twist on plain salads...warm it up and add a nice topping!
