Swordfish on a Skew


Swordfish on a Skew

2 lbs. fresh swordfish
1 cup vegetable oil
1/2 cup fresh lemon juice
1 tsp. oregano (dried)
2 onions (cut into about 10 wedges)
2 bay leaves
Salt
Skewers

Remove the skin from the swordfish and cut into cubes, about 1". Combine the remaining ingredients in a bowl and add in the swordfish; marinate for 3-4 hours. Turn on broiler, oil the skewers and thread the swordfish and onions on the skewers. On a piece of foil, place the skewers and brush with more of the marinade. Broil in the oven (*or grill) for 16-18 minutes, turning to make sure cooked on all sides. Sprinkle with more salt if necessary and serve.

*Johnna's tip: This is an easy, easy, easy meal to make when you get home. Throw the marinade together before work and just put it in the oven when you get home...simple enough, right?! Serve with asparagus cooked in balsamic vinegerette or creamed brussel sprouts...whatever veg is on your mind for the day;-)
