Jamaica's Curry Chicken


Jamaica's Curry Chicken

1 whole chicken (cut into pieces) or a package of chicken wings
Olive oil
1-1/2 onions (diced)
1 bunch scallions (chopped)
2 tbsp. ginger
1 tbsp. garlic (chopped)
4 tbsp. curry powder
2 cups of diced tomatoes
1 cup water or chicken stock
Salt (to taste)
pepper (to taste)

In a pot, add oil over medium heat and brown chicken pieces. In a another pot saute onions over oil in medium heat. Just as the onions began to gain color add in the scallions, garlic, ginger and curry powder; stir and saute for a few more minutes. Add in the tomatoes and chicken to the onion mixture pot. Add in the water or the chicken stock; bring to a simmer and cover. Cook for about 40-50 minutes, checking to see when the curry looks done. Serve.

*Johnna's tip: Add a few sprigs of parsley or even cilantro to make the flavor just pop!
