Collard Greenzz
2 lbs. collards
2 turkey necks
1 onion (chopped)
1 tsp. crushed red pepper
Salt (to taste) (*maybe about 2-3 tsp.)
Pepper (to taste)
Clean and wash greens; remove stems and ribs. Cut them up and put in a deep pot; add onions. Wash off the turkey necks and add to the pot. Add in red pepper, salt and pepper. Add enough water to cover greens and cook until tender, about 1 hour. Taste and add more seasonings to your taste. Enjoy!
*Johnna's tip: Collards are such a tasty and healthy veggie treat. It is where you can get your veggie nutrients but have some comfort food at the same time. The one thing about collards is that everyone likes them cooked and to taste differently. One persons collards may not suit the liking of all their guests. The best way to serve this dish expecting a good response is to figure out how your guests like their food (i.e. are they salt lovers, spicy eaters, etc.) Adjust the seasonings accordingly and indulge in the comfort foods healthy lover...Always, Always Enjoy!
*Johnna's tip, tip: You could also add in some freshly chopped tomatoes to spruce it up even more;-)
*Johnna's tip, tip, tip: One more thing, serve with other comfort foods such as mac 'n cheese (*recipe found on JKGF), smothered chicken or pork chops and potato salad (*recipe found on JKGF)...Now Eat!
