Old Fashioned String Beans
1 lb. green beans
1 onion (cut in half if desired)
2 small potatoes
1 piece of cooked ham (about a 1/4 cup)
2 tbsp. butter (unsalted)
1/2 cup water
1 tsp. garlic (minced)
1 tsp. garlic powder
Salt (to taste)
Pepper (to taste)
In a pot over medium heat, combine all ingredients; cover and cook for 20-25 minutes. The beans and potatoes should be soft; sprinkle with a little pepper and serve hot.
*Johnna's tip: Use a different meat if you like i.e. turkey neck, turkey wing, to season the mixture. The meat is key in adding the needed flavor to this recipe...you don't have to eat the meat, it's just there to add the necessary bite. This is a great addition to a soul food inspired menu.
