Simple Salmon Bake
4 large white potatoes
2 large onions (diced)
1 (15 1/2 oz.) can pink salmon
4 strips bacon
Dash of black pepper
Preheat oven to 350 degrees. Peel and dice potatoes; add onions and potatoes to a pot. Cover with water and bring to a boil; cook until done (DO NOT ADD SALT!). When done, drain the water and add in the salmon; mix well and spoon into a casserole dish. Put the bacon strips on top and sprinkle with a dash of pepper. Bake until bacon strips crisp, about 30-35 minutes. Serve!
Johnna's tip: This is a simple quick fixin' dinner that can be supplemented with many of your favorite ingredients i.e. carrots, bell peppers, etc. Salt can be added for those salt lovers. And serving over rice is not a bad idea as well...have fun with it!;-)
