The Salmon Croquette


The Salmon Croquette

1-12 oz. can pink salmon
2 large eggs
1/4 cup chopped onion
1/4 cup all purpose flour
2 tbsp. yellow corn meal
salt (to taste)
pepper (to taste)
Frying Oil (*Suggested: Crisco)

In a large bowl, mix all ingredients together except for the flour. Add in the flour last and mix. Mold the mixture into patties (*they should look like hamburger patties). Coat a frying pan with the oil over medium heat. Add the patties to the frying pan until there is no more room. Cook on each side until medium brown turning every 3-5 minutes. On separate plate, place a paper towel on it and place the salmon croquettes on it when they are done frying. Serve fresh out the frying pan, hot!

*Johnna's tip: Ummm salmon croquettes! These go really well with some rice or even some orzo with some gravy on the side. They are best served hot off the frying pan...it's just something about the moisture that's in them during that time...
