Baked and Cheesy Grits


Baked and Cheesy Grits

1-1/2 cups grits
6 cups water
2-1/2 tsp. salt
1 stick butter
1/4 tsp. cayenne pepper
3 eggs, beaten
1 lb. sharp cheese, grated
1 tbsp. chopped fresh parsley

Preheat oven to 350 degrees. Add grits to salted boiling water and cook till done. Add in butter, cayenne pepper, eggs, and 14 oz. of cheese; mix well. Pour into a buttered baking dish; top with remaining cheese, and bake for 1 hour and 15 minutes. Garnish with parsley; Serve.

*Johnna's tip: Baked grits give such a southern flair:-) Makes you think of your grandmothers kitchen...They are a classic southern dish that is the perfect way to start a day for breakfast. Make fun with them by adding some shrimp (*see JKGF shrimp and grits recipe). Also, for those health conscious readers (I know, I know...the one stick of butter sounds frightening to the arteries) take out some of the cheese and butter or just substitute with reduced to no fat options of the two.
