Baked and Cheesy Grits
Baked and Cheesy Grits
1-1/2 cups grits
6 cups water
2-1/2 tsp. salt
1 stick butter
1/4 tsp. cayenne pepper
3 eggs, beaten
1 lb. sharp cheese, grated
1 tbsp. chopped fresh parsley
Preheat oven to 350 degrees. Add grits to salted boiling water and cook till done. Add in butter, cayenne pepper, eggs, and 14 oz. of cheese; mix well. Pour into a buttered baking dish; top with remaining cheese, and bake for 1 hour and 15 minutes. Garnish with parsley; Serve.
*Johnna's tip: Baked grits give such a southern flair:-) Makes you think of your grandmothers kitchen...They are a classic southern dish that is the perfect way to start a day for breakfast. Make fun with them by adding some shrimp (*see JKGF shrimp and grits recipe). Also, for those health conscious readers (I know, I know...the one stick of butter sounds frightening to the arteries) take out some of the cheese and butter or just substitute with reduced to no fat options of the two. Enjoy!
