Homemade Mayonnaise

Homemade Mayonnaise

1 egg yolk
Salt (to taste)
1/2 tsp. Dijon style mustard
2/3 cup olive oil
2 tsp. white wine vinegar (*or lemon juice)

Make sure all ingredients are at room temperature before starting. In a bowl, whisk together egg yolk, salt and mustard. Whisk constantly and begin adding in the oil drop by drop; increase drops as the mayonnaise begins to thicken. After all of the oil is added in, add in the vinegar or lemon juice and beat. Give one last stir and its ready to be served.

*Johnna's tip: This recipe is great for those trying to watch their diets but still want the enjoyment of mayonnaise. With this recipe you are able to watch the ingredients that are included in one of your favorite dressings, so make a sandwich or two feeling guilt free!
