Warmed Up Spinach and Basil Salad
6 cups fresh spinach
2 cups fresh basil
1/2 cup olive oil
3 cloves garlic (chopped)
1/4 cup pine nuts
4 oz. prosciutto (diced)
Salt (to taste)
Pepper (to taste)
1/2 cup Parmesan cheese (grated)
Toss the spinach and basil together. Heat the oil in a skillet over medium heat; add in the garlic and nuts; saute until nuts are browned. Add in the prosciutto and cook for an additional 1-2 minutes. Season with salt and pepper and toss the spinach and basil with the warm dressing. Sprinkle on the Parmesan cheese. Eat healthy and Enjoy!
*Johnna's tip: Healthy as healthy can get:-) Salads are the best part about lunch time or as the side dish for dinner...why shouldn't they be changed and played with as such?? Add in cherry tomatoes or change the cheese to shaved Parmesan. Get healthy and make your body feel good!
