Roasted Garlic Brie
Roasted Garlic Brie
1 head of garlic
Salt (to taste)
Pepper (to taste)
1 tbsp. pesto
2 tbsp. olive oil
1 small round of brie
Peel outer layer of garlic head. Keep the head whole and cut off the tops of each clove; place in a double layer of aluminum foil. Drizzle with olive oil, salt and pepper. Make a loose tent around the garlic by twisting the top of the foil, make two slits in the foil so that steam may be released. Roast the garlic for 45 minutes or until it is soft. Remove the garlic from the oven. Place the brie in a baking dish and spread pesto on top of the brie. Place in the broiler until lightly browned and softened. Remove the garlic from its skins and place around the brie. It's ready to be served!
