Lite Summer Macaroni Salad
1 lb. elbow macaroni (*wheat is a good choice)
1/2 dozen hard boiled eggs (chopped)
1 onion (diced)
4 celery stalks
1 tsp. relish
4 cups low fat Miracle Whip salad dressing
Salt (to taste)
Garlic powder (to taste)
Onion powder (to taste)
1/4 tsp. pepper
Cook macaroni according to package directions; drain and rinse with cold water; drain. Add in the eggs, onions, celery and relish; mix. Add in the remaining ingredients and mix well. Chill in the refrigerator for 4-6 hours before serving. Eat!
*Johnna's tip: This is the lighter version of a summer favorite that's easy and helps in cooling off on the warm summer days. Enjoy with your favorite lemonade or alongside your favorite burgers. Decorate the dish with some freshly chopped parsley from your garden;-) Enjoy!
