Sweet Potato Pie
Sweet Potato Pie
Big can of sweet potatoes or 2 small cans of sweet potatoes
1/3 cup of evaporated milk
1 egg
1/3 cup brown sugar
1/2 tsp. vanilla
1 1/2 tbsp. cinnamon
1 tbsp. nutmeg
2 tbsp. melted butter
Preheat oven to 375 degrees. Mash up the sweet potatoes; melt the butter and add it to the sweet potatoes. Add in the rest of the ingredients and blend well. Pour mixture into the pie crust and bake about 35-40 minutes (you can gage when its ready based on the pie crust being browned...). Serve warm:-)
*Johnna's tip: Sweet potatoes are such a great foodie resource, the same ingredients for this pie can be used without the pie crust into a delicious side dish. You can also freeze any left over mixture that can't be squeezed into the pie crust especially if you don't want to make two pies.
*Johnna's tip, tip: Add a whipped cream topping or a meringue topping (a mixture of confectionery sugar and egg whites whipped together; spread on top of the pie and bake until meringue turns light brown...yum!). Indulge yourself in the ultimate comfort food!
