Tomato...Mozzarella...Bruschetta
3 tomatoes (seeded and chopped)
½ red onion (diced)
1 cucumber (peeled, diced and seeded)
1 cup fresh basil
1 tbsp. red wine vinegar
2 tbsp. olive oil
1 (16 oz.) loaf Italian sliced bread
2 garlic cloves (halved)
8 slices of fresh mozzarella cheese
Pre-heat oven to 350 degrees. Combine the tomatoes, onion, cucumber, basil, vinegar and 1 tbsp. oil in a glass bowl. Set aside for 15 to 30 minutes. Toast bread in oven until a light brown color. Rub 1 side of each bread slice with garlic and brush the same side with the remainder of the oil. Place 1 slice of fresh mozzarella on top of the oiled side of the bread and spoon the tomato mixture over the mozzarella. Serve it up as a tasty appetizer or a quick snack.
