1/2 cup Monterrey jack cheese (cubed)
1/2 cup cheddar cheese (cubed)
1/2 cup bread crumbs
1 tbsp. basil
1 tbsp. Dijon mustard
1 small white onion (chopped)
2 eggs
Preheat oven to 350 degrees. Mix all ingredients together in a bowl. Coat/Spray the bottom of a 9x13" tin pan with cooking spray. Add the ingredients to the pan and pat into a loaf. Bake for 50 minutes or until browned and cooked all the way through.
*Johnna's tip: Aww, the good 'ole family favorite: meatloaf. This recipe actually makes it fun and not sound that dreadful on the dinner menu:-) Meatloaf can be fun and posh if you make it, add in a few sprigs of fresh parsley on the side of the plate when you cut each piece and serve with a spinach salad...this should give it just the boost it needs!
