Lobster rolls
Lobster Rolls
1 lb. lobster meat (uncooked, about 2-3 tails)
3 tsp. mayonnaise
1 1/2 tbsp. butter (melted)
Hot Dog buns
2 tbsp. unsalted butter
Salt (to taste)
Pepper (to taste)
2 tsp. fresh lemon juice
Lettuce
Preheat broiler; Brush buns with melted butter. Remove meat from lobster tails and slice into small bite size pieces. In a skillet add in the butter, salt and pepper and saute the lobster until pink. Remove the lobster from the pan and add the lemon juice to the pan. Place the buns under the broiler. While the buns are under the broiler mix the lobster with the mayonnaise and take the buns out. Top the buns with a slice of lettuce, a couple spoonfuls of the lobster mixture and the sauce from the skillet (*when you put the lemon juice in it, this serves to deglaze it, so use this sauce as a topping for your rolls). Serve!
*Johnna's tip: Make some homemade mayonnaise to go along with your dish (*recipe found on JKGF)...it's a lot healthier and you get to decide just what flavor is right for your meals.
