Warmed Potato Salad

Warmed Potato Salad

1 (1/2 lb.) small red waxy potatoes
2 tbsp. white wine vinegar
2 tbsp. vegetable oil
3 tbsp. green onions (finely chopped)
1/4 cup fresh parsley (finely chopped)
Salt (to taste)
Pepper (to taste)
Garlic powder (to taste)

Simmer potatoes in water for 15-17 minutes until tender. Do not overcook the potatoes! Drain and cool until just enough to handle. Peel the warm potatoes, slice and place in a bowl. Mix the vinegar, oil, onions and parsley together. Pour mixture over potatoes and blend well. Season with salt, pepper and garlic powder. Serve warm.

*Johnna's tip: Serve alongside fried chicken or smothered chicken. Great salad especially during the winter months!
